(Serves 2 people)

Welcome to my WFH LUNCH SERIES!

This is one of my favourite lazy work from home meals because it’s super quick, doesn’t compromise on flavour and allows a little creativity!

š•€š•Ÿš•˜š•£š•–š••š•šš•–š•Ÿš•„š•¤

• 1 Tin of Tuna

• 1/2 Cucumber

• 1 Tin of Sweetcorn

• 1 Avocado

• 1 Mango

• 1 Pomegranate

• 200g Cooked Rice

• Crispy Onions

• Everything But The Bagel Seasoning or Sesame Seeds

• Hoisin Sauce

• Garlic Sriracha

• Mayo

Optional dressing to pour over rice- Sesame oil,Ā  extra virgin olive oil, soy sauce, flakey salt, garlic granules & water.

š•„š•–š•„š•™š• š••

  1. Drain you tuna into a bowl and add your sriracha and mayo to taste.

  2. Drain your sweetcorn and leave to the side.

  3. Cut your cucumber in half and dice (I like to cut mine into three batons and then l dice from there)

  4. Cut your avocado in half, remove the seed and dice into small cubes.

  5. Dice your mango and don’t be silly like me and try slicing the mango directly in the middle as the seed is huge haha.

  6. Cut your pomegranate and discard the white part.

  7. Next pack your cooked rice into a small ramekin and then warm up in the microwave until lukewarm.

  8. Turn the rice facedown into the middle of the bowl so it makes a cute bowl shape and then drizzle with mayo and hoisin sauce. I like to add crispy onions and bagel seasoning on top.

  9. Finally the best part- Half each of the toppings and start assembling clockwise.

  10. Once completed demolish!
