Baba Ganoush 🍆💓

I went through a number of recipes and different processes of how to make this dish and adjusted them all into this super easy & gorgeous recipe!

𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤

2 medium Aubergines

1/4 cup Tahini

1/2 Lemon

2 tsp minced Garlic

1/4 cup Olive Oil

1/4 teaspoon Cumin & Paprika

Generous amount of Salt & Pepper

Pomegranates

2 tbsp olive oil to drizzle on top

Fresh mint


𝕄𝕖𝕥𝕙𝕠𝕕

  1. Smoke your aubergine for 15 minutes until the skin is charcoal and the aubergine feels super soft! Some people prefer using the grill however I pierced my aubergine with a metal skewer and smoked it on the hob on a medium heat.

  2. Next peel your aubergines and slice them thinly.

  3. Add your sliced aubergine into a large mixing bowl along with your lemon juice, tahini, garlic, olive oil & spices and mash together!

  4. After mixing, plate up and top with olive oil, pomegranates and fresh mint!
