The perfect summer dish ☀️
These shallow fried stuffed courgette flowers were a dream and so easy to make!! I found this recipe from cozy kitchen and had to try it!
The filling I made to accompany them was divine made from Ricotta, Mozzarella, Lemon Zest and Basil giving it a really light and fragrant taste.

𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤
•1 Packet Courgette Flowers
•250g Ricotta Cheese
•2 handfuls of Shredded Mozzarella
•1 Lemon (Zest only)
•Couple sprigs of Basil
Tempura batter
•1/4 cup Flour
•2/4 cup Cornflour
•2/4 cup sparkling water
•knorr seasoning, all purpose and Paprika
𝕄𝕖𝕥𝕙𝕠𝕕
In a medium bowl combine your ricotta with your torn up basil, lemon zest, mozzarella and salt and pepper.
Next pour the contents into a piping bag for an easier fill.
Lightly rinse your courgette flowers and then begin piping a small amount inside each flower. (Do not overfill or they will explode once fried)
Heat your oil in a pan or you can use a deep fryer.
Whilst the oil is heating up, make a light batter with plain flour corn flour, sparkling water and your seasoning.
Dip your flowers into the mixture and then place them in the pan frying for 2-3 minutes on each side until crispy.
Drain on a kitchen towel and sprinkle a generous amount of salt and honey if you like it sweet!
