Courgette Fries 🍟

While you cannot go wrong with classic fries I wanted to try something new. I love courgettes and anything covered with breadcrumbs so these courgette fries were a real healthy treat. You can eat them as a side dish, a healthy snack or even sprinkle some bacon and make this a main dish😍



𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤

4 courgettes

• 1/2 cup Polenta

• 3 tablespoons of powdered Parmesan (I only had powdered but you could use 25g fresh parmesan)

• 100g sliced Cheddar

• 2 slices of Toast (optional)

• 2 Eggs

• Splash of Milk

• 1 tsp Salt & Pepper

• 1 & 1/2 tbsp Garlic granules (add more to your taste)


* VEGAN & GF Alternative- instead of doing the eggwash method, spray your courgettes with a little oil and dust with polenta & garlic granules on both sides. Top with some vegan cheese!

𝕄𝕖𝕥𝕙𝕠𝕕


1. Preheat the oven to 200c and line a baking tray with grease proof paper.

2. Cut the ends of the courgettes and cut them into bite size batons.

3. Using a food processor blend your slices of toasted bread and cheddar cheese until you have a bread crumb consistency.

4. Mix the breadcrumbs, polenta, parmesan, garlic, salt and pepper in a bowl.

5. Whisk the eggs in a seperate mixing bowl.

6. Now coat the courgette batons with the egg mix and coat evenly with the breadcrumb mixture.

7. Repeat this process for all the batons and place in the baking tray for 30 minutes until golden.

8. Create a dip of your choice and plate up your batons!
