PART 2- WFH LUNCH SERIES 🫶🏽 Smashed Bombay Potato Chaat 🥔

I’ve seen lots of smashed potato recipes and have been craving chaat so decided to create this hybrid dish! It is addictively good so once you make it, it will become a staple craving for you… thank me later 💓

𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤

•1kg Baby Potatoes

•Seasoning for Potatoes (Garlic Paste, Tomato Paste, Cumin, Dried Corriander, Honey, Pepper, Salt & All Purpose Seasoning)

•Olive Oil

•Greek Yogurt

•Tamarind

•Pomegrant Molases (optional)

•1 Diced Red Onion

•Chickpeas

•Pomegranates

•Fresh Mint

𝕄𝕖𝕥𝕙𝕠𝕕

1. Cut some greaseproof paper and place it on a baking tray.

2. Wash your baby potatoes and parboil them for 10 minutes in a pot of salted water.

3. Drain your pot and place your potatoes on the baking tray.

4. With a clean glass slowly flatten your potatoes, be gentle as you don’t want to completely flatten them.

5. In a small bowl add your tomato paste, seasonings, honey and enough olive oil to cover your potatoes. Start of with a 1/2 spoon of each seasoning and then keep adding and tasting your marinade till you find the right combo!

6. Once you achieve your desired taste, coat your potatoes evenly.

7. Bake in the oven on gas mark 7 until crispy.

8. For your toppings, dice a red onion and soak in water and drain some chickpeas into a bowl.

9. When your potatoes are out the oven top with a couple spoons of yoghurt, a generous coating of tamarind and pomegranate molases.

10. Next, layer your chickpeas, red onion, pomegranates and mint.

11. Serve up and enjoy!
