Part 4 now of my dinner party series and I introduce to you these baby croque monsieurs I made using rustic baguettes!
They definitely trump a traditional grilled cheese and are a perfect canape for hungry guests! The creamy cheese sauce and thick cut ham are so indulgent, you definitely need to try this one!
𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤
1 Rustic White Baguette
1 packet or Honey Roast Ham
150g Mozzarella or Cheddar Cheese
4tbsp Butter
For White Sauce
•50g Butter
•3 tbsp Flour
•350ml of Milk
•Cheese- 2-3 handfuls grated Cheddar Cheese & 50g Leicester Cheese (rough guide add as much as you like)
Seasoning- All Purpose, Knorr Chicken Seasoning, Paprika, Salt, Pepper, 1 small squeeze of Mustard (add to taste)
Another 50ml Milk for once cheese is added

In a large pot melt your butter and whisk in your flour until you get a paste like consistency.
Gradually add in 350ml of milk whisking after adding each amount to avoid any lumps.
After all the milk has been added, season generously and keep whisking ever so often for 5minutes.
Next, add in your grated cheese & allow to thicken.
If your sauce becomes a little too thick, add in your extra milk and then turn off and leave to cool.
Slice your rustic baguette into 1 inch slices and pair 2 slices up for each of your sandwiches.
Spread your two slices with your bechamel sauce and add a couple slices of ham to one side.
Next add your second slice on top, bechamel side down and then spread some more bechamel sauce on top followed by a handful of cheese.
Repeat for each croque monsieur and then place under grill for 3-4 minutes until the cheese has melted.
In a skillet, melt 2tbsp butter and add in each sandwich cheese side up for 3 minutes until golden brown.
Add another tbsp of butter and flip the croque monsieur for another minute.
Serve and enjoy!
