Savoury Red Leicester, Bacon & Olive Scones ๐Ÿง€๐Ÿซ’

Yields 10-12 scones

These are my take on some savoury scones! I used Red Leicester, Bacon & Black Olives and they were so damn delicious!! You can use any combination you fancy whether sweet or savoury and I promise they will be beautiful ๐Ÿ˜

๐•€๐•Ÿ๐•˜๐•ฃ๐•–๐••๐•š๐•–๐•Ÿ๐•ฅ๐•ค

โ€ข225g Self Raising Flour

โ€ข1 level tsp Baking Powder

โ€ข25-50g Cold Butter

โ€ข150ml Milk

โ€ข5 Rashers of Bacon

โ€ข50g Black Olives

โ€ข100g Red Leicester

โ€ข1 Beaten Egg or Milk to glaze

  1. Preheat your oven to gas mark 8. Cut a sheet of grease proof paper and place on a baking sheet.

  2. Sift your flour, baking powder and salt into a larger bowl.

  3. Cut your butter into cubes and then rub it together with the fry ingredients until it resembles fine breadcrumbs.

  4. For the filling, cut your bacon into cubes and fry, dice your olives and grate your Red Leicester cheese (saving some to sprinkle over your scones before baking)

  5. Add in your filling and mix through.

  6. Next, make a well in the centre and gradually pour in your milk, kneading to form a soft dough.

  7. Turn your dough onto a floured surface and knead lightly to remove any cracks.

  8. Roll out your dough with a rolling pin until it reaches about 2cm and use heart shape cutters to make your heart shapes, cutting as close as possible.

  9. Knead the remaining dough and if you have any leftovers, roll it into a bowl and that can be your taste test scone!

  10. Glaze with beaten egg or milk and sprinkle your cheese on top.

  11. Bake for 8-10 minutes until risen.

  12. When cooled down, serve with a generous amount of butter and enjoy!
