Truffle Mac and Cheese 🧀

The perfect dinner party appetisers is back and with a favourite of mine; Truffle Mac and Cheese😍 This is a really simple but indulgent recipe that your guests will love! If you’re not a fan of truffle you can miss that step & make it traditional!

𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤 (serves 6-8)
- 500g Macaroni
- 50g Cheddar Cheese
- 2 tsp Truffle Oil
- 1 Slice of Toast
For White Sauce
•50g Butter
•3 tbsp Flour
•450ml of Milk
•100g Grated Cheddar Cheese
•50g Leicester Cheese (rough guide add as much as you like)
Seasoning- All Purpose, Knorr Chicken Seasoning, Paprika, Garlic Granules, Salt, Pepper, 1 small squeeze of Mustard, optional- nutmeg.
𝕄𝕖𝕥𝕙𝕠𝕕
Boil your pasta according to the packaging and drain.
In a large pot melt your butter until brown and whisk in your flour until you get a paste like consistency.
Gradually add in 350ml of milk whisking after adding each amount to avoid any lumps.
After all the milk has been added, season generously and keep whisking ever so often for 5minutes.
Next, add in your grated cheese & allow to thicken.
Add in your extra milk and whisk till smooth and then turn off and taste (if you feel it needs more seasoning add this now)
Add in your macaroni and coat evenly.
Next, blitz your breadcrumbs and add them to a bowl grated cheese. Add some truffle oil for a more indulgent taste.
Spoon half your macaroni into little ramekins, add a handful of cheese and then top with the other half.
Top with your truffle breadcrumbs and grated cheese topping.
Place under the grill until cheese has melted and serve!
